Well, since it seemed lots of people on the hop yesterday wanted the Irish Soda Bread recipe, even though I didn’t hit my Networked Blogs target, I managed to wrestle it away from my mom and post it here today along with some other Special St. Patrick’s Day recipes!

Irish Soda BreadIngredients:
1/2 stick butter or oleo
4 C. Flour
1/4 C. sugar
1 egg
1 tsp baking powder
1 tsp baking soda
1 C. buttermilk or (1 C. milk soured with 1 tsp lemon juice)
1 tsp salt
1-1/4 C. raisins
1-1/2 tsp caraway seeds (Completely optional – I detest them, so we never include them in ours!)
Directions:
Mix all ingredients together and put in a greased pan and back in a 350-degree oven until golden brown (about 45 minutes)

Ingredients:
2 oz creme de menthe
2 oz white creme de cacao
2 oz triple sec
2 oz heavy cream
blender full of ice (or substitute 1/2 gal of vanilla ice cream for heavy cream and ice)
Chocolate shavings (optional)
Directions:
Blend all ingredients well in a blender. Serve in a chilled stemmed glass and top with chocolate shavings.
Alternative:
Add a layer of chocolate syrup to the bottom of the glass before adding the drink mixture.
